- Summer Recipes

Beat the heat with these recipes from Culinary Services that don't require turning on the oven. Fire up the grill and set the coleslaw to chill!

Dry Spice Rub:

  • 4 T brown sugar
  • 2 T salt
  • 1 T + 1 t onion powder
  • 1.5 T cumin
  • 1 T + 1.25 t black pepper
  • 1 T + .5 t chili powder
  • 2 t smoked paprika
  • 2 tsp cayenne pepper
  • Pinch of garlic powder

Instructions: Mix all ingredients together and use as a dry rub on chicken, tofu or veggies before cooking on the grill.

Rosemary Potatoes:

  • 1 lb red potatoes, whole or halved
  • 2 T olive oil
  • 1 t fresh rosemary, chopped
  • 1 t black pepper
  • 1/2 t salt
  • Pinch garlic powder

Instructions: Toss all ingredients together and wrap in aluminum foil. Cook on the grill with your protein of choice!

Tip: for a crispier potato, toss all ingredients together and bake in the oven on a cooking sheet (425F for 20-25 minutes).

Creamy Coleslaw:

  • 3/4 cup light mayonnaise
  • 1/3 cup light sour cream (*or fat free plain Greek yogurt)
  • 2 Tablespoons apple cider vinegar
  • 1/3 cup granulated sugar
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium green cabbage, finely chopped (makes about 10 cups)
  • 3/4 cup thinly cut carrots (approximately 3 carrots)
Instructions: To make the dressing, whisk together the first six ingredients. One hour before serving, mix in the cabbage and carrots and allow to chill. Serve cold.
Tip: This is a crowd pleaser. But, if you don't need potluck-sized quantities, you can easily make half or even quarter of the recipe.

*The WellWorks Registered Dietitian Nutritionist, Louise Cruz, recommends substituting sour cream with fat free plain Greek yogurt to maintain creaminess but to cut some of the fat. Looking for more great nutrition tips? Try Nutrition Counseling with Louise!
